If one was to describe your typical professionally designed cookbook or family recipe notebook it would look nothing like this body of work. Nothing at all.
Only Bad & Boujee wizards would create a book like this, and in this book we get to take a peek.
Very dark leather, deep mulberry tones bound with white-gold-esque threads- so close to silver, but with the faintest hint of golden undertones. The front has been stitched with extra pieces of leather, in different colours. The image seen is of an apple being grasped from above by a skeletal left hand.
A stain on the main mulberry cover reveals smoky, wispy lines, that could be interpreted in the shape of small wings.

Sooooo, book, there's something I have to jot down before I forget all about it.
Apple Crescent-Moon(Pie)cakes {Name is a work in progress, whatever, I'm the only one that reads you, book}
So this idea came to me a few days into being caravan'd...? caravanned vannnnnned from one place to another Yi, Li... uh... one of those places. There was an older woman by the roadside, peddling her baked wares. These delightful little cakelike pastries, with a filling of a sweet red bean, crushed nuts & dried fruits or one had a strange eggy custard, was rather salty and unexpectedly pungent.
"Mooncakes" as was translated for me, are tied to a local festival. This got me thinking about the festivals that we used to have at home, and how we are probably approaching the thinning of the veil, and the types of spiced foods that we associate with time of year.
But let me say this. Screw gourds. Boring. Lots of work. Stringy texture and not at all juicy. Lame.
Cinnamon, tasty, warming. Decidedly un-lame.
With lots of hand gestures, some broken and confused conversation & a bit of luck, I was able to find that there is a type of local apple called Shaanxi Ping Guo. Fragrant, intensely so. Sweet, thick skinned, juicy and just a hint of acidity; reminds me of a Pink Lady.
I wonder, book, if I can combine a few elements and make something for Inci Winci.
So what we need book, is to make a syrup, to be used in the dough, and then again in the filling, tying them to each other, though each with their own distinct profiles.

Invert Syrup (Golden Syrup)
- Juice of one large Lemon (strain it, yeh, hopefully you get about 50ml)
- 200 ml of clean water, plus a splash for brushing in when explained
- 400 grams of fine sugar. If scales aren't handy, then use the same measuring cup, and aim for "200ml" of sugar
- 1. Combine water and sugar in a small, but hopefully tall, pot. Heat until boiling.
- 2. Add lemon juice, wait until it begins to boil, then reduce heat to simmer.
- 3. Do not stir. With your brush, gently paint a little water onto the inside of the pot, so the water gently drips into the forming syrup which prevents crystals.
- 4. Every ten minutes look for crystals, on the walls of the pot near the forming syrup, brush with water until they dissolve.
- 5. After half an hour to forty five minutes it should be a nice amber colour.
- 6. Remove and allow to cool completely
- 7. Store in an airtight jar at room temperature.
- 8. After two to three days, it should be perfect. One day is... serviceable.
Delicious Dough
{How to make something similar to Kansui - bake one portion of baking soda at 175°C/350°F for thirty minutes. Then add four portions of water to dissolve the baking soda. Use this liquid as the substitute for lye water}
- 60g Golden Syrup
- 1/4 tsp Lye Water (Kansui) {Threshold replica below}
- 24g Vegetable Oil
- 100g Cake Flour
{How to make something similar to Kansui - bake one portion of baking soda at 175°C/350°F for thirty minutes. Then add four portions of water to dissolve the baking soda. Use this liquid as the substitute for lye water}
- 1. Mix golden syrup, lye water, and vegetable oil accurately in a mixing bowl.
- 2. Sieve the flour. Add all at once to the above mixture.
- 3. Combine all the ingredients.
- 4. Place the dough on a piece of baking paper. Refrigerate with arcane measures for thirty minutes to let the dough relax.
Spiced Shaanxi
Optional extras, maybe some chopped dried cranberries? Ooh, chopped Pecans!
- Two Large Apples, peeled and diced (eat the tasty tasty peel, yum!)
- 1/3 Cup of Apple Juice
- Juice from 1/2 a Lemon
- 1 shot of a wizards' favourite spirit (Fireball)
- 2 tablespoons of Syrup
- 1 teaspoon of powdered Cinnamon dusty goodness
Optional extras, maybe some chopped dried cranberries? Ooh, chopped Pecans!
- 1. In a medium pan, add all the ingredients, excluding the optional extras, and stir.
- 2. Bring to a simmer.
- 3. Check texture at three minutes, if softer is preferred, simmer longer.
- 4. After five minutes, stir in any of your optional extras.
- 5. Remove from heat.

Now here comes the tricky part, book. How in the deepest abyss do we combine these properly?
The dough is soft and delicate, not as hardy as a good apple pie crust.
Maybe we spoon just a small amount onto a sheet of dough, and form little balls similar in size to the local Mooncakes?
Mayyyybe, we just make it like a pie, and see what happens, yeah, that works.
Where are we, approaching some town that requires some kind of meeting. I'm glad Inci Winci has been distracted playing soldiers from time to time, means I've been able to sneak away and get this stuff done. Though she's no slouch, I am certain that she is aware I have been planning something, and in her kindness has been playing ignorant.

- 1. Roll out the Delicious Dough, into a circle.
- 2. Ever so gracefully, plonk the Spiced Shaanxi onto one half of the circle.
- 3. Fold over into a thin flat parcel, about as thick as fleshy-righty, stretching and shaping into a crescent moon shape.
- 4. Pinch the edges.
- 5. Bake it at 175°C/350°F for five minutes or until the surface starts to firm up.
- 6. Pray to Terra.
- 7. Present to be judged.
